Ingredients

  • Gluten-Free All-Purpose Flour Blend: 2 cups (ensure it's a good quality blend)
  • Granulated Sugar: 1 cup
  • Baking Powder: 2 teaspoons
  • Salt: 1/2 teaspoon
  • Large Eggs: 2 units
  • Milk (dairy or non-dairy): 1 cup
  • Vanilla Extract: 2 teaspoons
  • Unsalted Butter (softened): 1/2 cup (or dairy-free alternative)
  • For the Recipe Card (slightly different quantities):
  • Gluten-Free All-Purpose Blend: 1 ½ cups (ensure xanthan gum is included)
  • Granulated Sweetener: ¾ cup
  • Leavening Agent: 1 ½ teaspoons
  • Salt: ¼ teaspoon
  • Large Ovum Equivalents: 2 units, room temperature
  • Unsalted Butter: ½ cup (1 stick), softened
  • Plant-based Drink: ½ cup, room temperature
  • Flavoring Extract: 1 teaspoon

Instructions

  • 1. Prepare your dry items. Whisk together the gluten-free all-purpose blend, a leavening agent, and salt in a medium bowl.
  • 2. Combine the wet components. In a separate large bowl, cream together softened butter and sweetener until light and fluffy. Beat in the binding agents one at a time, then stir in the liquid and vanilla extract.
  • 3. Mix everything together. Gradually add the dry mixture to the wet mixture, mixing until just combined. Do not overmix the batter.
  • 4. Fill your cake pan. Pour the batter evenly into your prepared dot cake pan or individual molds.
  • 5. Bake the cakes. Bake in a preheated oven at 350°F (175°C) for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  • 6. Cool and decorate. Let the cakes cool completely on a wire rack before adding your favorite frosting and decorations.
