  • 4 pieces boneless, skinless chicken breasts Use fresh chicken for best results.
  • 2 tablespoons olive oil or ghee Use ghee for a dairy-free option.
  • 4 cloves garlic, minced Fresh garlic recommended.
  • 1 cup chicken broth (low-sodium) Adjust for saltiness preference.
  • 1 cup coconut milk (full-fat) Substitute with almond milk for low-fat.
  • 1 tablespoon fresh thyme or 1 teaspoon dried thyme Fresh herbs offer more flavor.
  • to taste Salt and pepper Season to your liking.
  • to taste Fresh parsley, chopped (for garnish) Optional, for garnish.

Preparation

  • Season the chicken breasts generously with salt and pepper on both sides.

Cooking

  • In a large skillet, heat the olive oil or ghee over medium-high heat.
  • Once hot, add the chicken breasts in a single layer and cook for 5-7 minutes on each side, or until nicely browned and cooked through.
  • Remove the chicken from the skillet and set aside.
  • In the same skillet, add the minced garlic and sauté for about 30 seconds, or until fragrant.
  • Pour in the chicken broth, scraping the brown bits from the bottom of the skillet.
  • Stir in the coconut milk and thyme, letting the mixture simmer for about 5 minutes to thicken slightly.
  • Return the chicken breasts to the skillet, spooning the sauce over them.
  • Allow everything to simmer together for another 3-4 minutes to combine the flavors.
  • Finally, remove the skillet from heat, sprinkle with fresh parsley, and serve hot.

Notes

For a thicker sauce, simmer it longer without the chicken, or add a teaspoon of cornstarch mixed with water. Store leftovers in an airtight container for up to 3 days in the fridge or freeze for up to 3 months.
