Ingredients
  

  • 3 cups cooked gluten-free penne or fusilli pasta
  • 2 cups cooked shredded chicken
  • 1 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 small yellow onion, finely chopped
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp garlic powder
  • 0.25 tsp ground nutmeg (optional)
  • 3 tbsp butter
  • 2 tbsp gluten-free all-purpose flour
  • 2 cups milk of choice (dairy or unsweetened almond)
  • 0.5 cup grated parmesan cheese
  • 1 cup shredded mozzarella
  • 0.5 cup plain cream cheese
  • 0.5 cup mozzarella or Italian blend cheese (for topping)
  • 2 tbsp chopped parsley (for garnish)

Instructions
 

  • Boil gluten-free pasta according to package directions, undercooking it by 1 minute. Drain and set aside.
  • In a saucepan, melt butter over medium heat. Stir in flour and cook for 1–2 minutes to make a roux. Gradually whisk in milk and cook until thickened. Lower heat and stir in parmesan, mozzarella, and cream cheese until smooth.
  • In a skillet, heat olive oil. Sauté chopped onion for 3 minutes, then add garlic and cook 1 minute. Add shredded chicken, salt, pepper, and garlic powder. Mix well.
  • In a large bowl, combine pasta, chicken mixture, and Alfredo sauce. Mix until well coated. Transfer to a greased 9x13" baking dish.
  • Top with remaining cheese. Bake at 375°F (190°C) for 20 minutes until bubbly and golden. Rest for 5 minutes before serving. Garnish with parsley.

Notes

Use quality cheese for best flavor and melt. Slightly undercook pasta to avoid mushiness. Let the casserole rest after baking to help it set. This dish freezes well before baking. Add sautéed veggies for variety or swap proteins like turkey or sausage. For dairy-free options, use plant-based butter, milk, and cheese.
