Ingredients

Main Ingredients

  • 1 small head small head of cabbage, finely chopped
  • 200 g of spaghetti or your preferred pasta
  • 4 slices of bacon or halal turkey bacon, chopped
  • 2 cloves of garlic, minced
  • 1 cup of heavy cream or a dairy-free alternative
  • 1/2 cup of grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

Cooking the Pasta

  • In a large pot, bring salted water to a boil. Cook your spaghetti according to the package instructions until al dente. Drain and set aside, reserving 1 cup of pasta water.

Sautéing the Bacon

  • In a large skillet, cook the chopped bacon over medium heat until crispy. Remove the bacon and place it on paper towels to drain excess fat.

Cooking the Cabbage

  • In the same skillet, add the chopped cabbage and sauté until softened, about 5-7 minutes. Stir in the minced garlic and cook until fragrant, about 1-2 minutes.

Creating the Sauce

  • Pour in the heavy cream and reserved pasta water, stirring to combine. Allow to simmer for 2-3 minutes. Fold in the Parmesan cheese, letting it melt into the sauce while stirring continuously.

Combining Everything

  • Add the cooked spaghetti and bacon back into the skillet. Toss until everything is well-coated in the creamy sauce. Season with salt and pepper to taste.

Serving

  • Plate the creamy cabbage carbonara and sprinkle minced parsley on top for a fresh finish.

Notes

Adjust the amount of cream based on your preferences for creaminess. For a lighter version, substitute some of the cream with chicken or vegetable broth. Consider adding other leafy greens like kale or spinach for extra nutrients. Store leftovers in an airtight container in the fridge for up to 3 days.
