Ingredients
  

  • 1.5 lbs boneless, skinless chicken thighs or breasts
  • 3 medium carrots, peeled and sliced
  • 2 celery stalks, chopped
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 medium zucchini, chopped
  • 1 cup chopped spinach or kale
  • 15 oz can diced tomatoes
  • 15 oz can white beans or chickpeas, drained
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1 bay leaf
  • 4 cups low-sodium chicken broth
  • 1/2 lemon, juiced (optional)
  • Salt and pepper to taste
  • Optional: cooked gluten-free pasta or rice, for serving
  • Optional: chopped fresh parsley for garnish
  • Optional: grated cheese alternative for topping

Instructions
 

  • Layer the chicken, vegetables, beans, seasonings, and broth into the crockpot, leaving out the spinach and lemon juice.
  • Cover and cook on LOW for 6–8 hours or HIGH for 4 hours, until the chicken is cooked through and the vegetables are tender.
  • Remove the chicken using tongs, shred with two forks, and return the shredded chicken to the soup.
  • Add chopped spinach or kale, stir, and cook for another 10 minutes to wilt the greens.
  • Stir in lemon juice (if using) just before serving. Taste and adjust with salt and pepper as needed.

Notes

Use chicken thighs for extra flavor or swap for breasts if preferred. Add leafy greens like spinach or kale at the end to avoid overcooking. Store leftovers in the fridge for 4 days or freeze up to 3 months. Serve with gluten-free rice or pasta for added heartiness. For variation, try Mediterranean, creamy, or spicy Southwest twists.
