  • 2 large eggs Fresh eggs enhance flavor
  • 3/4 cup gluten-free flour Regular flour can be used if gluten isn't an issue
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • Olive oil or non-stick spray For cooking

Preparation

  • In a mixing bowl, combine the cottage cheese, eggs, flour, baking soda, and salt. Stir until the mixture is well blended and somewhat smooth.
  • Heat a non-stick skillet over medium heat and lightly coat it with olive oil or non-stick cooking spray.

Cooking

  • Pour about 1/4 cup of the mixture into the skillet for each wrap, spreading it into a circle.
  • Cook for about 2-3 minutes, or until the edges look firm and the bottom is golden brown.
  • Flip carefully with a spatula and cook the other side for another 2-3 minutes.

Assembly

  • Once cooked, transfer the wraps to a plate. Fill them with your choice of fillings, such as grilled chicken, sautéed mushrooms, or fresh greens.
  • Serve warm or at room temperature with a drizzle of sauce or a sprinkle of cheese.
