  • 1 large egg
  • 2 tbsp olive oil plus extra for drizzling

Filling

  • 0.5 cups pizza sauce or seasoned crushed tomatoes
  • 1 cup shredded mozzarella or a melty halal-friendly blend
  • 0.5 cups sliced turkey pepperoni or roasted seasonal vegetables like thin apple slices or squash
  • 1 tbsp fresh basil, chopped
  • 1 pinch red pepper flakes optional
  • 1 tbsp honey optional for fall-sweet finish

Instructions
 

Preheat and Prepare

  • Preheat your oven to 425°F (220°C). Lightly oil two small ovenproof bowls or ramekins.

Mix Dough Base

  • In a bowl, whisk the flour, baking powder, and salt.
  • In another bowl, combine cottage cheese, egg, and 2 tbsp olive oil until slightly smooth.
  • Stir wet ingredients into dry ingredients just until combined — aim for a sticky batter rather than a firm dough.

Assemble the Bowls

  • Divide the mixture between the prepared bowls and press a shallow well in the center of each.
  • Spoon pizza sauce into the wells, sprinkle with cheese, and arrange turkey pepperoni or roasted vegetables on top.

Bake

  • Bake for 18–22 minutes, until edges are golden and cheese is bubbly.
  • If desired, broil for 1–2 minutes to get a light char on top.

Finish and Serve

  • Let rest for 3–5 minutes, then garnish with fresh basil and a light drizzle of olive oil or honey for a fall flair.
