Ingredients
  

Chicken and Marinade

  • 2 pieces boneless, skinless chicken breasts
  • 1 cup cottage cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning

Breading

  • 1 cup gluten-free breadcrumbs (or regular if not required)
  • 1 teaspoon garlic powder
  • 1 teaspoon dried parsley

Topping

  • 1 cup marinara sauce (store-bought or homemade)
  • 1 cup shredded mozzarella cheese
  • to taste Fresh basil for garnish (optional)

Instructions
 

Preparing the Chicken

  • Preheat your oven to 375°F (190°C).
  • In a bowl, mix the cottage cheese, Parmesan cheese, Italian seasoning, salt, and pepper. Coat the chicken breasts thoroughly in this mixture and marinate for at least 15-30 minutes.

Breading the Chicken

  • In a shallow dish, combine the gluten-free breadcrumbs, garlic powder, and dried parsley. Stir well.
  • Dip each marinated chicken breast into the breadcrumb mixture, pressing gently to adhere the breadcrumbs.

Baking

  • Place the breaded chicken breasts on a baking sheet lined with parchment paper and bake for 20-25 minutes.

Adding the Finishing Touches

  • Remove the chicken from the oven and spoon marinara sauce over each piece, then top with shredded mozzarella cheese.
  • Return the chicken to the oven for an additional 10-15 minutes until the cheese is melted and bubbly.

Serving

  • Let the chicken rest for a few minutes before garnishing with fresh basil. Serve over pasta, quinoa, or zucchini noodles.
