  • 3 large eggs
  • 1/4 cup honey or maple syrup Maple syrup is a good alternative.
  • 1 teaspoon vanilla extract
  • 1 cup almond flour Can substitute with all-purpose flour.
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup fresh blueberries Frozen can be used, make sure to thaw and drain.

Optional Garnish

  • cinnamon For sprinkling on top before baking.

Preparation

  • Preheat your oven to 350°F (175°C) and prepare a loaf pan by greasing it lightly.
  • In a mixing bowl, combine the cottage cheese, eggs, honey (or maple syrup), and vanilla extract. Blend until smooth and creamy.
  • Add the almond flour, baking powder, and salt to the wet mixture. Fold gently until just mixed.
  • Gently stir in the fresh blueberries.

Baking

  • Pour the batter into the prepared loaf pan. Sprinkle with cinnamon if desired.
  • Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  • Let the bread cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

For the fluffiest bread, ensure cottage cheese is smooth. Use ripe blueberries for best flavor. Don't overmix to maintain light texture.
