Ingredients
  

  • 1 cup full-fat cottage cheese
  • 1/3 cup freshly grated Parmesan cheese
  • 1 clove garlic
  • 1 tbsp olive oil
  • 1/4 cup milk or broth
  • 1 tbsp butter (optional, for richness)
  • 1 tsp lemon zest (optional)
  • 1 package gluten free pasta, cooked

Instructions
 

  • Add cottage cheese, Parmesan, garlic, olive oil, and milk or broth to a high-speed blender.
  • Blend until smooth and creamy, about 1 minute. Adjust texture with more liquid if needed.
  • Pour sauce into a saucepan and warm over medium heat. Do not boil. Stir continuously for 2–3 minutes.
  • Add optional butter and lemon zest. Stir to melt and combine for added flavor.
  • Toss the warm sauce with cooked gluten-free pasta and serve immediately.

Notes

Customize it your way: Add steamed broccoli, grilled chicken, or red pepper flakes. For a baked version, top with shredded mozzarella and bake until bubbly. Vegan? Use almond-based cottage cheese and nutritional yeast instead of Parmesan. This sauce also works beautifully in baked pasta dishes.
