For the avocado crema

  • 1 ripe avocado
  • 1/2 cup sour cream or Greek yogurt Use Greek yogurt for a healthier alternative.
  • 1 lime Juice of 1 lime Adjust for more tang.
  • Salt, to taste

For the tacos

  • 8 pieces corn or flour tortillas Use corn tortillas for a gluten-free option.
  • Fresh cilantro, chopped
  • Lime wedges for serving

Instructions
 

Preparation

  • In a bowl, combine the shrimp with olive oil, chipotle seasoning, salt, and pepper. Toss to ensure all the shrimp are well coated. Let them marinate for about 15-20 minutes for the flavors to meld.
  • While the shrimp is marinating, scoop the avocado into a food processor. Add sour cream (or Greek yogurt), lime juice, and salt. Blend until smooth and creamy. Adjust the flavors as necessary.

Cooking

  • Heat a skillet over medium-high heat. Once hot, add the marinated shrimp, spreading them in a single layer. Cook for about 2-3 minutes on each side until they turn pink and are cooked through.
  • In a separate pan or directly over a flame, warm the tortillas until they are pliable.

Assembly

  • Place a few shrimp in each tortilla, then drizzle generously with the avocado crema. Top with chopped cilantro and serve with lime wedges on the side.

Notes

If you have any leftovers, store the components separately in airtight containers in the refrigerator. The shrimp can stay fresh for up to 3 days while the avocado crema is best consumed within 1-2 days. You can substitute shrimp with grilled veggies or plant-based proteins for a vegan option.
