Ingredients
  

For the Bowls

  • 2 medium medium sweet potatoes, cubed
  • 1 can black beans, rinsed and drained
  • 1 avocado, diced
  • 1 cup corn (fresh, frozen, or canned)
  • 1 medium red bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1 lime, zested and juiced

For the Seasoning & Dressing

  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper, to taste

For Garnish

  • 1/4 cup fresh cilantro, chopped (for garnish)

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a large bowl, combine the cubed sweet potatoes, olive oil, chili powder, cumin, salt, and pepper. Toss until the sweet potatoes are well coated.

Roasting Sweet Potatoes

  • Spread the seasoned sweet potatoes in a single layer on a baking sheet. Roast in the preheated oven for 25-30 minutes, or until they are tender and nicely browned, tossing halfway through.

Making the Dressing

  • While the sweet potatoes are roasting, prepare the dressing by whisking together the lime zest, lime juice, and a pinch of salt in a small bowl.

Combining the Bowls

  • In a larger serving bowl, combine the roasted sweet potatoes, black beans, corn, diced avocado, red bell pepper, and red onion. Drizzle with the lime dressing and gently toss to combine.

Serving

  • Sprinkle with fresh cilantro before serving. Enjoy warm or at room temperature.

Notes

Cut sweet potatoes uniformly for even cooking. Don’t crowd the pan while roasting for best results. You can enhance the flavor by adding minced garlic or chopped jalapeños if desired. Adjust seasoning after adding dressing to your preference.
