  • 1 can 1 can of chickpeas, rinsed and drained Use canned chickpeas for convenience.
  • 1 large 1 large cucumber, diced
  • 1 cup 1 cup of cherry tomatoes, halved
  • 1 small 1 small red onion, finely chopped
  • 1 each 1 bell pepper, diced (any color you prefer)
  • 1/4 cup 1/4 cup of fresh parsley, chopped Chopped for garnish.

Dressing Ingredients

  • 1 each Juice of 1 lemon Fresh juice adds the best flavor.
  • 3 tablespoons 3 tablespoons of olive oil
  • to taste Salt and pepper to taste

Instructions
 

Preparation

  • In a large mixing bowl, combine the diced cucumber, halved cherry tomatoes, finely chopped red onion, and bell pepper.
  • Gently fold in the rinsed and drained chickpeas.

Make the Dressing

  • In a small bowl, whisk together lemon juice, olive oil, salt, and pepper.

Combine and Garnish

  • Pour the dressing over the salad mixture and toss everything together gently until well combined.
  • Add the chopped parsley for a fresh sprinkle of flavor.
