Ingredients
  

Main Ingredients

  • 2 tbsp olive oil
  • 1 lb chicken breast boneless, cubed
  • 3 cloves garlic minced
  • 1/2 tsp onion powder
  • 1/2 tsp dried oregano
  • 1/2 tsp smoked paprika
  • salt and pepper to taste
  • 1.5 cups gluten-free pasta penne or rotini, uncooked
  • 3 cups low-sodium chicken broth
  • 4 cups baby spinach lightly packed
  • 1/2 cup cream dairy-free or regular, or unsweetened almond milk
  • 1/3 cup grated parmesan or vegan cheese alternative
  • juice of half a lemon optional, for brightness

Instructions
 

  • In a large skillet over medium heat, warm the olive oil. Add cubed chicken and season with salt, pepper, onion powder, oregano, and smoked paprika. Sauté for 6–8 minutes until golden and cooked through. Remove and set aside.
  • In the same pan, add garlic and cook for 30 seconds. Pour in the uncooked pasta and chicken broth. Stir well.
  • Bring to a low boil. Cover and reduce heat. Simmer for 10–12 minutes, stirring occasionally, until pasta is tender and most of the liquid is absorbed.
  • Stir in the spinach and cooked chicken. When the spinach wilts (about 2 minutes), add the cream and parmesan. Stir until creamy and heated through.
  • Add lemon juice if using. Taste and adjust seasoning. Serve warm.

Notes

To make it dairy-free, use almond milk and vegan cheese. You can also add mushrooms, sun-dried tomatoes, or swap spinach for kale for variation. For best results, use a certified gluten-free pasta that holds up to simmering, like brown rice or quinoa pasta.
