Ingredients
  

Casserole Base

  • 2 cups cooked chicken, shredded
  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels, frozen or fresh
  • 1 cup salsa
  • 1 cup cooked rice (white or brown)
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • Tortilla chips (for topping) For added crunch
  • Spices (cumin, chili powder, salt, and pepper) Add to taste

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the cooked chicken, black beans, corn, salsa, and cooked rice. Add spices to taste, stirring until evenly distributed.

Baking

  • In a greased baking dish, spread half of the chicken mixture at the bottom. Sprinkle half of the cheese over this layer, then add the remaining chicken mixture on top. Finish with the rest of the cheese.
  • Crush some tortilla chips and sprinkle them over the top layer of cheese.
  • Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes.
  • Remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden.

Serving

  • Let it cool for a few minutes before serving. This dish can be accompanied by a fresh salad or your favorite side dish.

Notes

You can substitute chicken with extra beans for a vegetarian option. This casserole can be prepared ahead of time and refrigerated. Increase the baking time slightly if cooking straight from the refrigerator.
