  • 8 gluten-free lasagna noodles pre-cooked according to package instructions
  • 2 cups cooked shredded chicken rotisserie works great
  • 1.5 cups shredded mozzarella cheese
  • 1 cup ricotta cheese or substitute with cottage cheese Alfredo blend
  • 1 tsp garlic powder
  • 0.5 tsp dried parsley
  • salt and pepper to taste
  • 1.5 cups gluten-free Alfredo sauce homemade or store-bought

Optional Garnish

  • fresh basil or chopped parsley for garnish
  • extra mozzarella or Parmesan for topping

Instructions
 

  • Preheat your oven to 375°F (190°C). Lightly grease a baking dish with olive oil or non-stick spray.
  • In a large bowl, mix together shredded chicken, ricotta (or cottage cheese Alfredo), 1 cup mozzarella, garlic powder, parsley, salt, and pepper.
  • Lay the cooked gluten-free noodles flat. Spoon about 2–3 tablespoons of the filling onto each and carefully roll them up. Place seam side down in the baking dish.
  • Pour Alfredo sauce evenly over the rolls. Sprinkle the remaining mozzarella on top.
  • Cover with foil and bake for 20 minutes. Remove foil and bake for another 10 minutes, or until bubbly and golden on top.
  • Garnish with fresh herbs and serve hot.

Notes

These roll ups freeze well. Assemble and freeze before baking for a quick dinner option. For a dairy-free version, use plant-based Alfredo and cheese alternatives. Add sautéed spinach, mushrooms, or zucchini for extra veggies.
