Instructions
 

Cooking the Rice

  • In a medium saucepan, bring the vegetable broth to a boil and add the rice.
  • Reduce the heat to low, cover, and let it simmer for about 15 minutes until tender.

Browning the Meat

  • In a large skillet over medium heat, add the ground beef and onion.
  • Cook until the meat is browned and the onion is translucent, about 5-7 minutes.
  • Drain excess fat.

Adding the Vegetables

  • Stir in the bell pepper, diced tomatoes, and taco seasoning.
  • Let the mixture cook for about 5 minutes until everything is heated through.

Combining Ingredients

  • Once the rice is cooked, add it to the skillet with the meat and vegetable mixture.
  • Mix everything well and season with salt and pepper to taste.

Melting the Cheese

  • Sprinkle the shredded cheese over the top of the skillet.
  • Cover with a lid and allow it to melt, which should take about 3-5 minutes.
