Bread Ingredients

  • 2 cups almond flour, lightly packed
  • 1/2 cup finely shredded mozzarella cheese Grate finely for better melting
  • 1/4 cup grated Parmesan cheese
  • 2 large eggs, room temperature Use room temperature for better mixing
  • 2 tablespoons unsalted butter, melted
  • 2 tablespoons olive oil Plus extra for greasing
  • 3 cloves garlic, minced Or 1 1/2 teaspoons garlic powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon xanthan gum Optional, for extra structure
  • 2 tablespoons chopped fresh parsley For garnish

Preparation

  • Preheat your oven to 375°F (190°C). Line a small loaf pan with parchment paper and lightly grease it with olive oil.

Combine Ingredients

  • In a microwave-safe bowl or over a double boiler, melt the mozzarella until it’s soft and pliable (about 30–45 seconds in the microwave). Stir in the melted butter and olive oil.
  • In a separate bowl, whisk almond flour, Parmesan, baking powder, salt, and xanthan gum (if using). Add the minced garlic to this mixture.
  • Add the dry ingredients to the melted cheese mixture and stir.
  • Beat the eggs in a small bowl, then add them a little at a time, mixing until a thick dough forms. It should be sticky but manageable.

Shape and Bake

  • Transfer the dough to the prepared loaf pan and press it evenly. Score the top into slices with a knife.
  • Bake for 20–25 minutes until the top is golden and the loaf is set. If you want extra crust, broil for 1–2 minutes at the end—watch closely.

Finish and Serve

  • While warm, brush the top with a little extra olive oil or melted butter and sprinkle with parsley and extra Parmesan. Serve warm.

Notes

Use room-temperature eggs for smoother incorporation. For a buttery garlic spread, mix extra minced garlic with melted butter and brush on when loaf comes out of the oven. Store cooled Cheesy Keto Garlic Bread in an airtight container in the refrigerator for up to 4 days.
