  • 1 medium head medium head of cauliflower, cut into florets
  • 2 tablespoons olive oil
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 1 teaspoon paprika
  • 1 teaspoon turmeric

For Assembly

  • 1 cup cooked quinoa (or rice of choice)
  • 1 cup fresh spinach or mixed greens
  • ½ cup cherry tomatoes, halved
  • ¼ cup tahini sauce (for drizzling)
  • to taste Fresh parsley, chopped (for garnish)

Instructions
 

Preparation

  • Preheat your oven to 425°F (220°C) for roasting the cauliflower.
  • In a large bowl, toss the cauliflower florets with olive oil, cumin, coriander, paprika, turmeric, salt, and pepper until evenly coated.

Roasting

  • Spread the cauliflower in a single layer on a baking sheet and roast for about 25-30 minutes, or until golden brown and tender, flipping once halfway through.

Assembly

  • In each bowl, create a base of quinoa or rice. Top with the roasted cauliflower, fresh spinach, and cherry tomatoes.
  • Drizzle with tahini sauce and sprinkle with fresh parsley.
