Ingredients
  

For the Cashew Cream

  • 1 cup raw cashews (soaked for at least 2 hours) Soaking enhances creaminess.
  • 1 cup water
  • 1 tablespoon lemon juice
  • 1 teaspoon garlic powder
  • 1 teaspoon salt

For the Pasta

  • 8 ounces gluten-free pasta Your choice of gluten-free pasta.
  • 1 pound chicken breast, diced
  • 2 tablespoons Cajun seasoning
  • 1 tablespoon olive oil
  • 1 large bell pepper, diced
  • 1 medium onion, chopped
  • 2 cups spinach
  • to taste salt and pepper

For Garnish

  • to taste Fresh parsley, chopped
  • optional Red pepper flakes For added heat.

Instructions
 

Prepare the Cashew Cream

  • After soaking the cashews, drain and rinse them.
  • In a blender, combine the soaked cashews, water, lemon juice, garlic powder, and salt. Blend until smooth and creamy. Set aside.

Cook the Pasta

  • In a large pot, bring salted water to a boil. Add the gluten-free pasta and cook according to package instructions. Drain and set aside.

Sauté the Chicken

  • In a large skillet, heat the olive oil over medium heat.
  • Add the diced chicken and season with Cajun seasoning, salt, and pepper. Cook until the chicken is browned and cooked through, about 5-7 minutes. Remove from the skillet and set aside.

Sauté the Vegetables

  • In the same skillet, add the onions and bell peppers. Sauté until softened, about 3-4 minutes.
  • Stir in the spinach and cook until wilted.

Combine Everything

  • Add the cooked chicken back into the skillet, along with the drained pasta. Pour the cashew cream over the top, stirring to combine. Cook for an additional 2-3 minutes until everything is heated through.

Serve

  • Serve hot, garnished with fresh parsley and a sprinkle of red pepper flakes if desired.

Notes

Soaking the cashews is key to achieving that creamy texture. Adjust the seasonings according to preference. Make sure to cook the pasta until al dente.
