Ingredients
  

  • 1.5 cups gluten-free flour blend (with xanthan gum)
  • 0.5 cup cold unsalted butter, diced
  • 1 large egg
  • 0.25 tsp sea salt
  • 1–2 tbsp cold water, as needed
  • 2 large yellow onions, thinly sliced
  • 2 tbsp olive oil
  • 1 tbsp unsalted butter
  • 0.25 tsp sea salt (for onions)
  • 0.5 tsp fresh thyme (or 1/4 tsp dried)
  • 0.5 cup shredded mozzarella or Gruyère
  • 0.33 cup heavy cream or coconut cream
  • 1 egg (for filling)
  • fresh cracked pepper to taste

Instructions
 

  • In a large bowl, whisk together the gluten-free flour and salt. Using your fingers or a pastry cutter, work in the cold butter until the mixture resembles coarse crumbs. Add the egg and mix until a dough starts to form. Add cold water a teaspoon at a time until the dough just comes together.
  • Flatten into a disk, wrap in parchment, and chill for 30 minutes. Roll out between two sheets of parchment and cut rounds. Press into molds and prick bottoms. Chill again while preheating oven to 375°F (190°C).
  • Blind bake crusts for 10 minutes using parchment and pie weights. Remove weights and bake 5 more minutes until lightly golden. Set aside.
  • Heat olive oil and butter in a skillet over medium-low. Add onions and salt. Cook slowly for about 30 minutes, stirring often, until golden and jammy. Add thyme in last 5 minutes.
  • In a small bowl, whisk together cream, egg, cheese, and pepper. Add cooled caramelized onions and mix well.
  • Spoon filling into baked tartlet shells. Bake at 350°F (175°C) for 18–20 minutes, until filling is set and golden.

Notes

Use cold butter and chill the dough for a flaky crust. Don’t rush the onions slow caramelization brings deep flavor. Blind-baking ensures crisp bottoms. Can be made ahead and frozen. Try using Gruyère, mozzarella, or goat cheese for variation.
