Preparation

  • In a large mixing bowl, combine the peanut butter, melted coconut oil, maple syrup, vanilla extract, and salt. Mix until smooth and creamy.
  • Gradually add the powdered sugar to the peanut butter mixture, mixing until well incorporated. The mixture should be thick and moldable.

Shaping and Chilling

  • Using your hands, scoop about a tablespoon of the mixture and roll it into small balls. Place them on a lined baking sheet.
  • Refrigerate the peanut butter balls for about 30 minutes to 1 hour to firm up.

Chocolate Coating

  • In a microwave-safe bowl, melt the dairy-free chocolate chips along with the tablespoon of coconut oil in short intervals, stirring each time until completely melted and smooth.
  • Remove the chilled balls from the refrigerator. Using a fork, dip each ball into the melted chocolate, covering them completely. Let any excess chocolate drip off.
  • Place the chocolate-coated balls back onto the baking sheet and return to the refrigerator to set for an additional 30 minutes.
