Ingredients
  

Vegetables

  • 2 cups bottle gourd (lauki), peeled and diced
  • 6-8 pieces drumstick pods (moringa), trimmed and cut into 2-inch pieces Choose young pods for tenderness.
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 inch piece fresh ginger, grated
  • 1 medium carrot, diced
  • 1 medium potato, diced (optional for extra body)

Broth and Seasonings

  • 4 cups vegetable or chicken stock For gluten-free, check the broth's certification.
  • 1 tbsp olive oil or ghee Use ghee for a richer flavor.
  • 1/2 tsp cumin seeds Toast for better flavor.
  • 1/2 tsp freshly ground black pepper
  • 1/2 tsp turmeric
  • Salt to taste

Garnishes

  • Fresh cilantro or parsley, chopped For garnish.
  • Lemon wedges To serve.

Instructions
 

Preparation

  • Peel and dice the bottle gourd, trim and slice drumstick pods, and chop the onion, carrot, and potato.

Cooking

  • Heat 1 tablespoon of olive oil or ghee in a large pot over medium heat. Add cumin seeds and toast until fragrant.
  • Add the chopped onion and cook until translucent, about 4-5 minutes. Stir in the garlic and ginger and sauté for another minute.
  • Add turmeric and black pepper, then toss in the diced carrot, potato (if using), bottle gourd, and drumstick pieces. Sauté for 3-4 minutes to combine flavors.
  • Pour in 4 cups of stock, bring to a boil, then reduce heat to a simmer. Cover and cook for 20-25 minutes, until vegetables are tender and drumsticks are cooked through.
  • Use an immersion blender to lightly purée the soup for a silky texture, or leave it chunky if preferred. For a completely smooth soup, transfer to a blender in batches and blend until smooth.
  • Adjust seasoning with salt and extra pepper or lemon juice for brightness. Ladle into bowls and garnish with fresh cilantro or parsley. Serve with lemon wedges on the side.

Notes

For a richer finish, stir in a tablespoon of cream or coconut milk at the end. Refrigerate leftovers in an airtight container for up to 3 days. Freeze in portions for up to 3 months.
