  • 1 cup cherry tomatoes, halved
  • 1/2 cup corn, fresh or frozen
  • 1/4 cup cilantro, chopped

Seasoning Ingredients

  • 1 each juice of lime

Preparation

  • Prepare your rice or quinoa according to package instructions. This will form the base of your bowls.
  • If you haven’t already cooked the chicken, grill or bake it until fully cooked. Once cooled, shred the meat using two forks.

Mixing

  • In a large bowl, combine the black beans, corn, cherry tomatoes, and diced avocado. Gently fold in the shredded chicken.
  • Add lime juice, salt, and pepper to taste to enhance the freshness of the ingredients while adding a tangy kick.

Assembly

  • Start with a generous portion of the rice or quinoa at the bottom of the bowls.
  • Top with the black bean mixture and sprinkle with chopped cilantro for a fresh finish.

Notes
