  • 1 cup cherry tomatoes, halved

  • 1 large cucumber, diced
  • 1 cup cooked and crumbled turkey bacon or halal bacon alternative Optional; can be replaced with chickpeas or tofu for vegetarian/vegan options.

For the Dressing

  • ½ cup dairy-free mayo Substitute part with ripe avocado for creaminess.
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Dijon mustard
  • Salt and pepper, to taste Adjust seasoning to personal preference.

For Garnish

  • Chopped fresh herbs (like basil or parsley), for garnish

Instructions
 

Cook the Gluten-Free Pasta

  • Bring a large pot of salted water to a boil. Add the gluten-free pasta and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process.

Prepare the Dressing

  • In a small bowl, whisk together the dairy-free mayo, apple cider vinegar, Dijon mustard, salt, and pepper until well combined.

Combine the Ingredients
