Ingredients

For the Salmon

  • 1 pound salmon fillets, cut into bite-sized pieces Use fresh or thawed frozen salmon.
  • 1 tablespoon olive oil For flavor and to help season the salmon.
  • Salt and pepper to taste Adjust based on preference.
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika

For the Bang Bang Sauce

  • 1/2 cup mayonnaise Can substitute with Greek yogurt or avocado-based mayonnaise.
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon sriracha Adjust to taste for spice level.
  • 1 teaspoon lime juice

For Serving

  • 3 cups cooked rice or quinoa Use any variety; cooked in advance.
  • 2 cups mixed vegetables (like bell peppers, cucumber, and shredded carrots) Fresh and colorful mix enhances the bowl.
  • Fresh cilantro or green onions for garnish Adds freshness.
  • Lime wedges for serving For an extra burst of flavor.

Instructions

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a bowl, combine the salmon pieces with olive oil, garlic powder, smoked paprika, salt, and pepper. Toss until every piece is well-coated.

Cooking

  • Spread the salmon bites on a baking sheet lined with parchment paper. Bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
  • While the salmon is baking, whisk together the mayonnaise, sweet chili sauce, sriracha, and lime juice in a small bowl until smooth.

Assembly

  • In each serving bowl, add a scoop of cooked rice or quinoa. Top with mixed vegetables and the crispy salmon bites.
  • Generously drizzle the Bang Bang sauce over the salmon and veggies.
  • Finish with fresh cilantro or green onions, and a squeeze of lime for a refreshing touch.

Notes

Tips: Don’t overcook the salmon and customize your sauce by adjusting the sriracha level. Fluffy grains enhance the bowl's base. Consider adding toasted nuts or seeds for extra texture.
