Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, combine the rolled oats, salt, cinnamon, and baking powder.
  • In another bowl, whisk together the milk, peanut butter, honey (or maple syrup), and vanilla extract until well blended.
  • Pour the wet ingredient mixture into the bowl of dry ingredients, mixing until everything is evenly combined. Consider adding chocolate chips or nuts at this stage.

Baking

  • Spread the mixture into a greased baking dish.
  • Bake for 25-30 minutes, or until the edges are golden brown.

Serving

  • Allow the baked oatmeal to cool slightly before serving. Enjoy it warm topped with fresh fruit or a drizzle of additional peanut butter.

Notes

For a crunchy finish, try adding a streusel topping made from oats, nuts, and a little brown sugar before baking. This dish stores well in an airtight container in the refrigerator for up to 5 days.
