This gluten-free version of Baked Parmesan Crusted Chicken captures the crispy, cheesy comfort of the Italian classic without the wheat. Ingredients
  

  • 4 boneless, skinless chicken breasts or thighs
  • 2 eggs (or plain dairy-free yogurt for binding)
  • 1 cup finely shredded Parmesan cheese (not powdered)
  • 1 cup gluten-free coating (almond flour, crushed GF cornflakes, or GF breadcrumbs)
  • 1 tsp garlic powder
  • 1 tsp Italian herbs
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika or chili flakes (optional)
  • olive oil spray (for crisping)

Instructions
 

  • Preheat oven to 400°F (200°C). Flatten chicken slightly for even cooking.
  • Set up 3 bowls: one with beaten eggs (or yogurt), one with gluten-free crumbs, and one with Parmesan mixed with spices.
  • Dip each chicken piece into the egg, then coat in the Parmesan and crumb mixture. Press to adhere.
  • Place coated chicken on a parchment-lined baking tray. Lightly spray tops with olive oil.
  • Bake for 20–25 minutes, flipping halfway. Chicken is done when internal temp reaches 165°F and coating is golden.
  • Serve hot with your favorite sides like mashed potatoes, salad, or roasted veggies.

Notes

Try it with almond flour for a keto-friendly version, or swap Parmesan for a dairy-free cheese alternative. Serve with mashed potatoes, arugula salad, or roasted vegetables. Perfect for meal prep  reheats well and stays crispy!
