Ingredients
  

Dry Ingredients

  • 1 cup gluten-free all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt

Wet Ingredients

  • 1/2 cup unsweetened applesauce
  • 1/4 cup melted coconut oil or vegetable oil
  • 2 large eggs
  • 1 tsp pure vanilla extract
  • 1 tsp vanilla bean paste

Optional Toppings

  • as needed powdered sugar for dusting or a vanilla glaze

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Grease a donut pan with cooking spray or coconut oil.
  • In a large mixing bowl, whisk together the gluten-free all-purpose flour, granulated sugar, brown sugar, baking powder, baking soda, and salt.
  • In a separate bowl, mix together the unsweetened applesauce, melted coconut oil, eggs, vanilla extract, and vanilla bean paste.
  • Gradually pour the wet mixture into the dry ingredients, stirring gently until just combined. Do not overmix.
  • Carefully spoon the batter into the prepared donut pan, filling each mold about 2/3 full.

Baking

  • Bake in the preheated oven for about 10 to 12 minutes or until the donuts spring back when touched.
  • Insert a toothpick into the center; it should come out clean.

Cooling and Serving

  • Let the donuts cool in the pan for a few minutes before transferring them to a wire rack.
  • Dust with powdered sugar or glaze your donuts while they’re still warm, if desired.

Use fresh ingredients for the best rise and texture. For light and airy donuts, mix just until incorporated; overmixing can lead to dense treats. Customize toppings as desired.
