  • ½ cup gluten-free breadcrumbs Ensure they are gluten-free.
  • 1 cup cooked vegetables (optional) Such as broccoli or spinach for added nutrition.

Preparation

  • Preheat the oven to 350°F (175°C).
  • Bring a large pot of salted water to a boil. Add the gluten-free macaroni and cook according to package instructions until al dente. Drain and set aside.
  • In a large saucepan, melt the butter over medium heat. Stir in the gluten-free flour and cook for about 1 minute until it forms a roux.
  • Gradually whisk in the milk, stirring continuously until the sauce thickens.
  • Remove from heat and mix in the cheddar and mozzarella cheese, salt, pepper, garlic powder, and onion powder until fully melted.
  • Combine the cooked macaroni with the cheese sauce in a large mixing bowl. If using, fold in any cooked vegetables.
  • Transfer the mixture into a greased baking dish and top with gluten-free breadcrumbs.
  • Bake in the preheated oven for approximately 25-30 minutes, or until golden and bubbly.

Notes

Taste the cheese sauce before baking to ensure proper seasoning. You can prepare this dish one day ahead; just refrigerate and bake when ready. For added crunch, consider a streusel topping or adding cooked protein like chicken or turkey.
