  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 teaspoon ground cinnamon

Wet Ingredients

  • 0.5 cup granulated sugar can substitute with coconut sugar for a healthier option
  • 1 large egg
  • 0.5 cup milk can use almond milk for a dairy-free option
  • 0.33 cup vegetable oil can substitute with melted coconut oil
  • 1 teaspoon vanilla extract

Additions

  • 1 cup peeled and diced apples (about 1-2 medium-sized apples)
  • to taste chopped nuts or raisins optional for added texture

Instructions
 

Preparation

  • Preheat your air fryer to 320°F (160°C).
  • In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, and ground cinnamon.
  • In another bowl, whisk together the granulated sugar, egg, milk, vegetable oil, and vanilla extract until well combined.
  • Gradually add the wet ingredients to the dry mixture, stirring gently until just combined.
  • Gently fold in the diced apples (and chopped nuts or raisins, if using).
  • Line your air fryer basket with parchment paper or use silicone muffin cups.
  • Divide the batter evenly among the muffin cups, filling each about ¾ full.

Cooking

  • Place the muffin cups in the air fryer basket and cook for 12-15 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the muffins cool for a few minutes in the basket before transferring them to a wire rack.

Notes

For the best flavor, opt for tart apples like Granny Smith or sweet varieties like Honeycrisp. Avoid overmixing for light, airy muffins.
