  • 2 medium medium zucchinis Look for firm zucchinis for the best flavor.
  • 1 cup gluten-free breadcrumbs Store-bought or homemade.
  • 1/2 cup grated Parmesan cheese Or a halal alternative.
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 2 large eggs Beaten.
  • to taste Olive oil spray

Preparation

  • Wash the zucchinis thoroughly and slice them into rounds about 1/4 inch thick.
  • In a large mixing bowl, combine gluten-free breadcrumbs, Parmesan cheese, garlic powder, onion powder, dried oregano, salt, and pepper.
  • In another bowl, beat the eggs until well combined.
  • Dip each zucchini slice into the egg mixture, allowing any excess to drip off, then coat them with the breadcrumb mixture. Press gently to ensure the crumbs stick.

Cooking

  • Preheat your air fryer to 400°F (200°C) for about 5 minutes.
  • Place the coated zucchini slices in a single layer in the air fryer basket. Lightly spray with olive oil.
  • Air fry the zucchini for about 10-12 minutes, flipping halfway through, until golden brown and crispy.
  • Remove the zucchini fries from the air fryer and let them cool slightly before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the air fryer at 350°F (175°C) for 5-7 minutes. For longer storage, freeze the uncooked, coated zucchini slices.
