Ingredients
  

For the Chicken and Marinade

  • 2 lbs chicken thighs (boneless and skinless) for easy cooking
  • 1/4 cup soy sauce or tamari for gluten-free option
  • 2 tbsp honey or maple syrup for a vegan option
  • 2 tbsp rice vinegar
  • 1 clove garlic (minced)
  • 1 teaspoon ginger (freshly grated)

For Garnish

  • 2 stalks green onions (finely sliced) for garnish
  • sesame seeds optional, for garnish

Preparation

  • In a bowl, whisk together the soy sauce, honey, rice vinegar, garlic, and ginger until thoroughly mixed.
  • Place the chicken thighs in the marinade, ensuring they are well-coated. Cover and let it marinate for at least 30 minutes, or overnight in the refrigerator for enhanced flavor.

Cooking

  • Preheat your air fryer to 380°F (193°C) for about 5 minutes.
  • Remove the chicken thighs from the marinade (reserve the marinade for later). Place the chicken thighs in the air fryer basket in a single layer. Cook for 12-15 minutes, flipping halfway through, until the chicken reaches an internal temperature of 165°F (74°C).
  • While the chicken is cooking, pour the reserved marinade into a small saucepan. Bring it to a boil over medium heat, then reduce to a simmer until slightly thickened, about 5 minutes.
  • Once cooked, remove the chicken from the air fryer and drizzle it with the thickened marinade.
  • Top with green onions and sesame seeds, if desired. Serve hot with rice or stir-fried vegetables for a complete meal.

Notes

To ensure perfect results, consider marinating overnight, cut chicken thighs into equal pieces for even cooking, and avoid overcrowding the air fryer basket.
