Ingredients
  

  • 1 cup natural peanut butter or almond butter
  • 3/4 cup coconut sugar or maple syrup
  • 1 large egg
  • 1 tsp baking soda
  • 1/2 cup dark chocolate chips

Instructions
 

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a medium bowl, stir together the nut butter, coconut sugar or maple syrup, egg, and baking soda until fully combined.
  • Fold in the chocolate chips evenly throughout the dough.
  • Scoop tablespoon-sized portions onto the prepared baking sheet and gently flatten the tops.
  • Bake for 8 to 10 minutes, just until the edges are set and the tops look slightly golden.
  • Let the cookies cool for 5 minutes on the tray before moving them to a wire rack to finish cooling.

Notes

Swap peanut butter with almond or sunflower seed butter if needed. Use coconut sugar for firmer cookies or maple syrup for softer texture. For egg-free version, try a flax egg. Store in an airtight container for up to 4 days or freeze for later.
