Preparation

  • In a mixing bowl, combine 1 cup of gluten-free flour with a pinch of salt. Gradually add warm water until a dough forms. Aim for a flexible dough that isn't too sticky.
  • Knead the dough for a few minutes until it's smooth. Cover it with a clean cloth and let it rest for about 10 minutes.
  • On a lightly floured surface, divide the dough into 6 to 8 equal portions based on desired wrap size. Roll each piece out to a thin circle.

Cooking

  • Preheat a non-stick skillet over medium heat. Cook each wrap for about 1-2 minutes on each side, or until golden brown spots appear.
  • As you cook the wraps, stack them on a plate and cover with a kitchen towel to keep them warm and soft.

Tips for success include not overworking the dough, using warm water for a softer dough, and enjoying fresh wraps. Store in an airtight container in the fridge for up to three days or freeze for a month with parchment paper between each wrap.
