Main Ingredients

  • 1.5 lbs boneless, skinless chicken thighs or breasts cut into chunks or strips
  • 4 cloves garlic finely minced
  • 3 tbsp unsalted butter or dairy-free alternative
  • 1 tbsp olive oil
  • 0.5 tsp paprika
  • 1 tsp dried Italian herbs
  • salt and pepper to taste
  • 1 tbsp fresh lemon juice
  • chopped fresh parsley optional, for garnish

Instructions
 

  • Pat chicken dry and season with salt, pepper, paprika, and Italian herbs.
  • Heat olive oil and 1 tbsp of butter in a skillet over medium-high heat. Add chicken in a single layer. Cook 4–5 minutes per side until golden and cooked through.
  • Push chicken to one side. Add remaining 2 tbsp butter and minced garlic. Stir garlic for 30 seconds until fragrant, then toss with chicken.
  • Drizzle with lemon juice, sprinkle parsley if desired, and serve hot.

Notes

Great for meal prep and ready in just 20 minutes. For a creamier sauce, add ¼ cup coconut cream. Make it spicy with red pepper flakes. Stores well in fridge for up to 4 days.
