Ingredients
  

Main Ingredients

  • 1 lb boneless chicken breast cutlets or thighs Boneless works quickest.
  • 2 cups chopped veggies (broccoli, zucchini, bell peppers, red onion, green beans, carrots) Use whatever vegetables are available.

Flavoring

  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tbsp fresh lemon juice For finishing.

Instructions
 

Preparation

  • Preheat oven to 450°F (232°C).
  • Toss chicken and chopped veggies with olive oil and seasonings.
  • Spread mixture out on a sheet pan without piling on top of each other.

Cooking

  • Roast for about 12 to 15 minutes.
  • Check the chicken; if not cooked through, stir veggies and roast for a few more minutes.
  • Finish with a squeeze of lemon juice and optional chili flakes.

Notes

Cut vegetables small to ensure fast cooking. Can substitute with any other veggies or use frozen.
