Equipment

  • heatproof bowl
  • hand mixer or whisk
  • mixing bowl
  • rubber spatula
  • ramekins or serving glasses

Ingredients

  • 150 g dark chocolate (at least 70%) or chocolate chips
  • 1 cup full fat coconut cream or heavy cream, chilled
  • 2 tbsp maple syrup or honey
  • 1 tsp espresso or vanilla extract (optional)
  • 1 pinch sea salt

Instructions

  • Melt the chocolate in a heatproof bowl over simmering water or in the microwave using 30-second bursts. Stir until smooth.
  • Cool the melted chocolate slightly until warm but not hot.
  • Whip the chilled cream with a hand mixer or whisk for 1–2 minutes until soft peaks form.
  • Gently fold the melted chocolate into the whipped cream using a spatula.
  • Add maple syrup, espresso or vanilla (if using), and a pinch of sea salt. Fold gently to combine.
  • Spoon the mousse into serving glasses or ramekins. Enjoy immediately or chill for 5–10 minutes for a firmer texture.

Notes

For a dairy-free or vegan version, use coconut cream and dairy-free chocolate. You can also substitute maple syrup with honey or agave. Chill for a firmer texture, or enjoy immediately for a softer mousse.
