- 2–3 medium zucchinis
- 1 tbsp olive oil
- 2 cloves garlic, minced
- Salt and black pepper, to taste
- Fresh herbs like basil or oregano
- Optional: roasted cherry tomatoes, lemon zest, ricotta, grilled chicken or shrimp
Instructions
- Trim the ends of the zucchinis and spiralize into thin noodles using a spiralizer or julienne peeler.
- Lay zoodles on paper towels to remove excess moisture.
- Heat olive oil in a nonstick pan over medium heat.
- Add minced garlic and sauté for 30 seconds.
- Toss in the zucchini noodles and cook for 2–3 minutes, stirring occasionally.
- Season with salt, pepper, and herbs of choice.
- Remove from heat before adding any sauce or toppings.
- Customize with roasted tomatoes, lemon zest, ricotta, or protein of your choice.
Notes
Avoid overcooking the zoodles to maintain their crisp texture. Store spiralized zucchini in an airtight container with paper towels for up to 3 days.
