Description

A hearty, one-pan dinner of juicy sausage, tender potatoes, and crisp green beans roasted to perfection—minimal prep, minimal cleanup, and full of cozy fall flavor.


Ingredients

  • 1 lb chicken sausage links (or turkey sausage, fully cooked)
  • 1 lb baby potatoes (red, gold, or mixed), halved
  • 12 oz fresh green beans, trimmed
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1 tsp dried thyme (or rosemary)
  • ½ tsp salt (adjust to taste)
  • ¼ tsp black pepper
  • Optional garnish: fresh parsley or grated Parmesan cheese

Instructions

  1. Preheat oven to 400°F (200°C) and line a large sheet pan with parchment paper. If doubling the recipe, use two pans.
  2. In a large bowl, toss halved potatoes with 1 tbsp olive oil, garlic powder, smoked paprika, half the salt, and black pepper. Spread on sheet pan and roast for 15 minutes.
  3. Cut sausage into 1-inch pieces. Toss green beans with remaining olive oil, thyme, and a pinch of salt.
  4. After potatoes roast for 15 minutes, add sausage and green beans to pan. Toss to combine.
  5. Roast for 20–25 minutes more, until potatoes are golden, sausage is browned, and green beans are slightly blistered.
  6. Serve warm, garnished with parsley or Parmesan if desired.

Notes

Don’t overcrowd the pan—spread ingredients evenly for proper roasting. Cut potatoes uniformly for even cooking. Use pre-cooked sausage to keep the cook time short.
