- 1 cup almond flour
- 1/3 cup tapioca starch
- 1/3 cup oat flour
- 1 tbsp sugar
- 1 tbsp baking powder
- 1/4 tsp salt
- 2 large eggs, separated
- 1 cup milk of choice
- 1 tbsp apple cider vinegar
- 1/4 cup melted butter or coconut oil
- 1 tsp vanilla extract
Instructions
- Preheat your waffle iron.
- In a small bowl, combine milk and apple cider vinegar; let sit for 5 minutes.
- In a large bowl, whisk together almond flour, tapioca starch, oat flour, baking powder, sugar, and salt.
- Add egg yolks, milk mixture, melted butter, and vanilla to the dry ingredients and stir until just combined.
- In a separate bowl, beat egg whites until stiff peaks form.
- Gently fold egg whites into the batter until incorporated—do not overmix.
- Let the batter rest for 5–10 minutes.
- Pour batter into preheated waffle iron and cook according to manufacturer’s instructions until golden and crisp.
- Serve warm with toppings of choice.
Notes
For extra crispy waffles, add 1 tbsp cornstarch to the dry ingredients. These freeze and reheat well—perfect for meal prep.
