- 2 cups gluten free all-purpose flour
- 1/4 cup tapioca starch
- 1 tsp salt
- 1 tbsp sugar
- 1 packet dry yeast
- 3/4 cup warm water
- 2 tbsp olive oil
- 1 cup shredded mozzarella cheese
- 1/2 cup marinara sauce
- 1 tsp dried oregano
- Fresh basil (optional)
- Extra olive oil for brushing
Instructions
- In a bowl, combine warm water, sugar, and yeast. Let sit until foamy.
- In a large bowl, mix gluten free flour, tapioca starch, and salt.
- Add yeast mixture and olive oil. Mix to form a soft dough.
- Cover and let rise in a warm place until doubled in size.
- Preheat oven to 400°F (200°C). Line a baking tray with parchment paper.
- Lightly flour surface, roll dough into a rectangle.
- Spread marinara sauce evenly, sprinkle mozzarella, oregano, and basil if using.
- Roll up dough tightly into a log. Slice into even rolls.
- Place rolls on tray, brush tops with olive oil.
- Bake 15–20 minutes until golden and cheese is bubbling.
- Let cool slightly before serving. Enjoy warm or freeze extras.
Notes
For extra flavor, add pepperoni or sautéed veggies to the filling. Freeze baked rolls in airtight bags for up to a month — reheat in oven for best results.
