- 1 ½ cups gluten-free all-purpose flour (with xanthan gum)
- 1 ½ tsp baking powder
- ½ tsp salt
- 1 tsp Italian seasoning
- 1 cup shredded mozzarella cheese
- 1 large egg, lightly beaten
- 1 cup milk (dairy or non-dairy)
- ¾ cup pizza sauce
- ½ cup mini pepperoni slices (or turkey pepperoni)
- ½ cup shredded mozzarella cheese (extra for filling)
- 1 tbsp olive oil
- ¼ tsp garlic powder
- ¼ tsp dried oregano
- Grated Parmesan cheese (optional)
Instructions
- Preheat oven to 375°F (190°C). Line or grease a mini muffin tin.
- In a large bowl, whisk flour, baking powder, salt, and Italian seasoning.
- Stir in mozzarella to coat in flour. Add egg and milk, mixing until just combined.
- Spoon 1 tbsp batter into each muffin cup. Add ½ tsp pizza sauce, a sprinkle of mozzarella, and pepperoni. Top with another spoonful of batter.
- Brush tops with olive oil. Sprinkle with garlic powder, oregano, and Parmesan if using.
- Bake 15–18 minutes, until golden brown and a toothpick comes out clean.
- Cool for 3–4 minutes before serving warm.
Notes
Avoid overmixing to keep bites tender. Use fresh baking powder for best rise. Line the muffin pan well to prevent sticking. Serve with marinara, ranch, or garlic butter for dipping.
