Description

Naturally flourless, rich, and chewy peanut butter cookies that are quick, satisfying, and perfect for gluten-free diets.


Ingredients

Scale
  • 1 cup natural creamy peanut butter
  • ¾ cup coconut sugar (or light brown sugar)
  • 1 large egg
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • Optional: ½ cup dark chocolate chips or chopped peanuts

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment.
  2. In a mixing bowl, stir together peanut butter, sugar, egg, baking soda, and salt until smooth.
  3. Fold in chocolate chips or peanuts if using.
  4. Scoop 1 tablespoon of dough and roll into balls. Space them 2 inches apart.
  5. Press lightly with a fork to create a criss cross pattern.
  6. Bake for 10–12 minutes, until edges are set.
  7. Let cool on the sheet for 5 minutes before transferring to a rack.

Notes

For a firmer bite, add 1–2 tablespoons almond flour or gluten free oat flour. Ensure all ingredients are certified gluten free to avoid contamination.
