Description

This Gluten Free Lasagna Soup is cozy, hearty, and brings all the classic lasagna flavors into one warm bowl — no gluten, no fuss, just pure Italian comfort.


Ingredients

  • 1 lb sweet Italian sausage
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 4 cups gluten-free chicken or vegetable broth
  • 1/4 cup red wine (optional)
  • 8 oz gluten-free lasagna noodles, broken into pieces
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper, to taste
  • 1 cup ricotta cheese or dairy-free alternative
  • Fresh basil, for garnish
  • Grated parmesan or dairy-free cheese, for topping

Instructions

  1. In a large pot, brown the Italian sausage over medium heat. Add diced onion and cook until soft, then stir in garlic.
  2. Pour in crushed tomatoes, broth, red wine (if using), oregano, basil, salt, and pepper. Stir well and bring to a simmer.
  3. Break gluten-free lasagna noodles into pieces and add to the pot. Cook, stirring occasionally, until noodles are tender but not mushy.
  4. Taste and adjust seasoning as needed. If desired, stir in fresh spinach or a spoonful of pesto for extra flavor.
  5. Ladle soup into bowls. Top each with a dollop of ricotta, a sprinkle of parmesan, and fresh basil.
  6. Serve hot with gluten-free bread for dipping.

Notes

For best results, choose sturdy gluten-free lasagna noodles that hold up in soup. Store leftovers in the fridge for up to 3 days. If freezing, freeze the broth base without noodles and add fresh noodles when reheating.
