- 1 lb sweet Italian sausage
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 can (28 oz) crushed tomatoes
- 4 cups gluten-free chicken or vegetable broth
- 1/4 cup red wine (optional)
- 8 oz gluten-free lasagna noodles, broken into pieces
- 1 tsp dried oregano
- 1 tsp dried basil
- Salt and pepper, to taste
- 1 cup ricotta cheese or dairy-free alternative
- Fresh basil, for garnish
- Grated parmesan or dairy-free cheese, for topping
Instructions
- In a large pot, brown the Italian sausage over medium heat. Add diced onion and cook until soft, then stir in garlic.
- Pour in crushed tomatoes, broth, red wine (if using), oregano, basil, salt, and pepper. Stir well and bring to a simmer.
- Break gluten-free lasagna noodles into pieces and add to the pot. Cook, stirring occasionally, until noodles are tender but not mushy.
- Taste and adjust seasoning as needed. If desired, stir in fresh spinach or a spoonful of pesto for extra flavor.
- Ladle soup into bowls. Top each with a dollop of ricotta, a sprinkle of parmesan, and fresh basil.
- Serve hot with gluten-free bread for dipping.
Notes
For best results, choose sturdy gluten-free lasagna noodles that hold up in soup. Store leftovers in the fridge for up to 3 days. If freezing, freeze the broth base without noodles and add fresh noodles when reheating.
