- 1/4 cup potato starch
- 1 tablespoon psyllium husk or 1 teaspoon xanthan gum
- 1 tablespoon sugar
- 1 teaspoon salt

- 1 cup warm water
- 1/4 cup olive oil
- 1 tablespoon apple cider vinegar
- 1 egg (optional, for extra richness)
- Olive oil or melted butter for brushing
Instructions
- Preheat oven to 375°F (190°C) and line a baking sheet or grease a round cake pan.
- In a large bowl, whisk together rice flour, tapioca starch, potato starch, psyllium husk, sugar, salt, and baking powder.
- Slowly add warm water, olive oil, apple cider vinegar, and egg if using. Mix until dough is sticky but holds together.
- Let the dough rest for 10 minutes to absorb moisture.
- Divide dough into equal balls and place on prepared pan. Cover with a clean towel and let rise in a warm place until doubled in size.
- Brush tops with olive oil or melted butter.
- Bake for 20–25 minutes, until rolls are golden and sound hollow when tapped.
- Cool slightly before serving. Enjoy warm!
Notes
Freeze leftover rolls tightly wrapped for up to 3 months. Reheat directly from frozen in a warm oven for 8–10 minutes for fresh-baked softness.
