- 8 oz dark chocolate (60% cocoa or higher), chopped
- 1/2 cup heavy cream or coconut cream
- 1/4 cup almond flour or coconut flour
- 1 tsp vanilla extract
- Pinch of salt
- 8 oz melted chocolate for coating
- Optional toppings: crushed nuts, shredded coconut, cocoa powder, gluten-free sprinkles, freeze-dried berries
- Lollipop or popsicle sticks
Instructions
- Melt the dark chocolate and cream together in a bowl over a saucepan (double boiler method) until smooth and glossy.
- Remove from heat and stir in almond flour, vanilla extract, and salt until well combined.
- Chill the mixture in the refrigerator for 1–2 hours until firm enough to shape.
- Use a small scoop or spoon to form balls, insert lollipop sticks, and place on a parchment-lined tray.
- Freeze for 15 minutes to help firm the pops before dipping.
- Dip each pop in melted chocolate, letting the excess drip off.
- Immediately add toppings of your choice while the coating is still wet.
- Let them set at room temperature briefly, then chill until the shell hardens completely.
- Store in an airtight container in the fridge or freezer until ready to serve.

Use high-quality chocolate and certified gluten-free ingredients. For a dairy-free version, opt for coconut cream and vegan chocolate. These store beautifully in the freezer and are perfect for parties or gifting.
