Instructions
- In a bowl, mix shredded chicken with taco seasoning, salsa (if using), salt, and pepper. Stir in cheese if desired.
- Warm corn tortillas in a microwave or skillet until soft and pliable.
- Place a spoonful of filling near one edge of each tortilla and roll tightly.
- To fry: Heat oil in a skillet over medium heat. Place taquitos seam-side down and cook until golden and crispy on all sides.
- To bake: Preheat oven to 400°F (200°C). Arrange taquitos seam-side down on a baking sheet. Brush lightly with oil and bake for 15–20 minutes, until crisp.
