Description

These mini indulgences pack all the flavor of traditional cheesecake into gluten-free, bite-sized treats that are perfect for parties, snacking, or satisfying sweet cravings without compromise.


Ingredients

  • 1 1/2 cups gluten-free graham cracker crumbs or crushed gluten-free cookies
  • 1/4 cup melted butter
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 325°F (160°C) and line a mini muffin tin with paper liners.
  2. Combine gluten-free crumbs and melted butter, then press a spoonful into each liner to form the crust.
  3. In a bowl, beat cream cheese and sugar until smooth.
  4. Add eggs one at a time, then mix in vanilla extract.
  5. Spoon cheesecake mixture over each crust, filling nearly to the top.
  6. Bake for 15–18 minutes, until centers are set.
  7. Cool completely, then refrigerate for at least 2 hours.
